Keep in mind power requirements, as well as making sure you get a card that is 'Mac compatible', some of them are called 'Mac Pro Edition'. These have the BIOS flashed so you get video when you try to boot the machine into recovery mode (Pre-OS). It is possible to do a DIY flash conversion of the 7970 to make it effectively a Mac edition. I do not believe Crossfire or SLI is possible in OS X but would be possible in Windows via Boot Camp.

This is down to the Mac drivers. For the benefit of the original poster if your using Apple's Final Cut Pro X then an AMD card like the Radeon HD 7950 or 7970 is a better choice, if your using Adobe products and I believe DaVinci then Nvidia cards are a better choice.
